Vegan Lion’s Mane Mushroom Bites

Ingredients:
- 2 large dried Lion’s Mane mushrooms

- 1 cup water
- Oil for deep frying
- Dipping sauce (sweet Thai chili, ketchup, or honey mustard)
Directions:
Hydrate the Mushrooms:
- Prepare a brine with 4 cups water and 2 tbsp kosher salt. Stir until the salt dissolves.
- Submerge the dried Lion’s Mane mushrooms in the brine and let them soak for at least 2 hours or overnight in the refrigerator.
- Squeeze out excess water from the mushrooms before proceeding.
Prepare the Mushrooms:
- Cut the hydrated Lion’s Mane mushrooms into bite-sized pieces (about 3 inches long and 1/2 inch thick).
- Toss the pieces with 1 tbsp of cornstarch to coat them evenly.
Make the Batter:
- In a bowl, combine the remaining cornstarch, all-purpose flour, baking powder, salt, white pepper, and garlic powder. Whisk to blend.
- Gradually add the water, whisking continuously until you get a smooth, lump-free batter. The batter should be thick enough to coat the back of a spoon.
Heat the Oil:
